Sourced from the Chiapas region of Mexico, this Fair-Trade Organic coffee is roasted to a deep, chestnut brown to achieve a subtlety sweet flavor with a smooth, clean finish. Our neighbors to the south have produced this wonderful coffee that is known for its natural sweetness.

Even as the sixth-largest producer of coffee globally, Mexico’s harvesting practices have remained consistent since coffee was first cultivated in the country during the 19th century. In fact, the vast majority of the regions coffee is grown by small, organic farmers tending to the hallowed ground like that of Chiapas— host to revered Mayan ruins and where human occupation dates back to 1500 B.C.
Boulder Organic Coffee, with the help of Fair Trade, USA located two superb co-ops to source the coffee: GRAPOS and Majomut.
GRAPOS- Grupo de Asesores de Produccion organic y Sustentables is a small coffee producer organization located near the town of Tapachula in the southern Mexican state of Chiapas. The organization represents 2,600 small coffee farmers who work on an estimated 8,000 hectares (or 800,000 acres) of land. Most members come from the communities of Union Juarez, Cacahoatan and Tapachula, all within Chiapas.
Mexico coffee may also come from Unión de Productores y Comunidades Cafeticultores Beneficio Majomut— an association of farm cooperatives of 1,000 coffee-growing families. These families operate as completely Certified Organic; a practice they value not only for the absence of chemical fertilizers, but because it allows them to care for the land like that of their ancestors, fostering an intimate connection “with nature and with ancestral knowledge of its laws.” More from this co-op via their website here.
